  • Chicken (or) Tuna Lunch

    1 can of chicken/tuna
    2 eggs
    1 tomato diced
    ½ - 1 small onion diced
    1 tablespoon parsley
    1 tablespoon grated cheese
    1 tablespoon all purpose flour
    1 teaspoon salt
    1 teaspoon black pepper
    1 teaspoon cayenne pepper
    1 teaspoon red pepper flakes
    1 teaspoon garlic
    Olive oil
    Place eggs in a bowl and mix well. Then add chicken/tuna (drained dry), onion, tomato, parsley, grated cheese, and flour. Mix well.
    Add salt, black pepper, cayenne, red pepper flakes, and garlic again, mix well.
    In a fry pan over low to medium heat, put some olive oil and spread with a brush evenly around the bottom and sides.
    Add mixture. Spread it out evenly, cover, and cook for 10 minutes. Remove lid and place a plate over the pan and flip. Then, slide the mixture back into the pan and fry covered for another 5 minutes. Serve.​
